- 3 pounds Boneless skinless chicken breasts (cut into bite-sized pieces)
- 3 tablespoons Olive oil (split)
- 2 tablespoons + 2 teaspoons Chili powder (divided)
- 3 tablespoons Cumin (split)
- 1 teaspoon Salt (split plus more to taste)
- 0.5 teaspoon Cayenne pepper
- 3 cups Chopped onion (about 2 medium)
- 3 tablespoons Minced garlic
- 3 cans 15-ounce White beans (drained)
- 2 cans 4-ounce Chopped green chiles
- 2 teaspoons Oregano
- 4 to 6 cups Low-salt chicken broth
- 6 cups Cheese (shredded Monterey Jack and cheddar)
- 2 cups Sour cream (divided)
Instructions
- Prepare the Chicken: Heat 1 tablespoon of olive oil in a large pot over medium heat. Add the chicken pieces and sprinkle 1 teaspoon of chili powder, 1 tablespoon of cumin, and 1/2 teaspoon of salt on top. Cook until the chicken is fully cooked, about 5-7 minutes. Remove the chicken from the pot and set it aside.
- Cook the Vegetables: In the same pot, add the remaining olive oil, chopped onion, and garlic. Sauté until the onions become translucent, about 3-4 minutes.
- Combine the Ingredients: To the onion and garlic mixture, add the remaining chili powder, cumin, cayenne pepper, white beans, green chiles, oregano, and the cooked chicken. Stir well to combine all the ingredients.
- Add the Broth: Pour in 4 to 6 cups of low-salt chicken broth, depending on how thick you want the chili. Bring the mixture to a boil, then reduce the heat to a simmer. Let it cook for about 30 minutes, stirring occasionally.
- Finishing Touches: Just before serving, swirl in 1 cup of sour cream and half of the shredded cheese into the chili. This adds creaminess and rich flavor.
- Serve: Ladle the chili into bowls and top with the remaining cheese and a dollop of leftover sour cream if desired.
Notes
For a spicier kick, consider adding jalapeños. Can be made in a slow cooker for convenience.
