Description

A hearty and flavorful chili made with tender chicken, white beans, and spices, perfect for family gatherings or chilly evenings.


Ingredients

  • 3 pounds Boneless skinless chicken breasts (cut into bite-sized pieces)
  • 3 tablespoons Olive oil (split)
  • 2 tablespoons + 2 teaspoons Chili powder (divided)
  • 3 tablespoons Cumin (split)
  • 1 teaspoon Salt (split plus more to taste)
  • 0.5 teaspoon Cayenne pepper
  • 3 cups Chopped onion (about 2 medium)
  • 3 tablespoons Minced garlic
  • 3 cans 15-ounce White beans (drained)
  • 2 cans 4-ounce Chopped green chiles
  • 2 teaspoons Oregano
  • 4 to 6 cups Low-salt chicken broth
  • 6 cups Cheese (shredded Monterey Jack and cheddar)
  • 2 cups Sour cream (divided)

Instructions

  1. Prepare the Chicken: Heat 1 tablespoon of olive oil in a large pot over medium heat. Add the chicken pieces and sprinkle 1 teaspoon of chili powder, 1 tablespoon of cumin, and 1/2 teaspoon of salt on top. Cook until the chicken is fully cooked, about 5-7 minutes. Remove the chicken from the pot and set it aside.
  2. Cook the Vegetables: In the same pot, add the remaining olive oil, chopped onion, and garlic. Sauté until the onions become translucent, about 3-4 minutes.
  3. Combine the Ingredients: To the onion and garlic mixture, add the remaining chili powder, cumin, cayenne pepper, white beans, green chiles, oregano, and the cooked chicken. Stir well to combine all the ingredients.
  4. Add the Broth: Pour in 4 to 6 cups of low-salt chicken broth, depending on how thick you want the chili. Bring the mixture to a boil, then reduce the heat to a simmer. Let it cook for about 30 minutes, stirring occasionally.
  5. Finishing Touches: Just before serving, swirl in 1 cup of sour cream and half of the shredded cheese into the chili. This adds creaminess and rich flavor.
  6. Serve: Ladle the chili into bowls and top with the remaining cheese and a dollop of leftover sour cream if desired.

Notes

For a spicier kick, consider adding jalapeños. Can be made in a slow cooker for convenience.
