Description

A warm twist on creamy avocados, baked with eggs for a nutritious breakfast.

Ingredients

Scale
  • 2 ripe avocados
  • 4 eggs
  • Salt and pepper to taste
  • Toppings of choice (e.g., cheese, chili flakes, herbs)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Cut the avocados in half and remove the pit, scooping out some flesh to make room for the egg.
  3. Set the avocado halves in a baking dish, stabilizing them if necessary.
  4. Crack an egg into each avocado half, and discard or reserve any excess egg white.
  5. Season with salt and pepper, adding any desired toppings.
  6. Bake for 15-20 minutes, until the egg white is set and yolk is slightly runny.
  7. Let cool for a minute before serving and enjoy immediately.

Notes

Best consumed fresh as avocados can brown quickly. Store in an airtight container for 1-2 days if necessary.
