Instructions
- Preheat your oven to 425°F (220°C).
- Cut the avocados in half and remove the pit, scooping out some flesh to make room for the egg.
- Set the avocado halves in a baking dish, stabilizing them if necessary.
- Crack an egg into each avocado half, and discard or reserve any excess egg white.
- Season with salt and pepper, adding any desired toppings.
- Bake for 15-20 minutes, until the egg white is set and yolk is slightly runny.
- Let cool for a minute before serving and enjoy immediately.
Notes
Best consumed fresh as avocados can brown quickly. Store in an airtight container for 1-2 days if necessary.
