Description

A delicious and nutritious breakfast featuring creamy avocados and perfectly baked eggs.


Ingredients

  • 2 ripe avocados
  • 4 large eggs
  • Salt and pepper, to taste
  • Optional toppings: chopped chives, diced tomatoes, crumbled feta cheese, or hot sauce

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Cut the avocados in half and remove the pit. If the hole is too small, scoop out a bit more flesh to create a larger space for the egg.
  3. Place the avocado halves in a baking dish. You can use a muffin tray to help them stay upright if necessary.
  4. Crack an egg into each avocado half. Be careful not to spill any egg white. If the egg doesn’t fit, you can discard a little of the egg white.
  5. Season the eggs with salt and pepper to taste.
  6. Bake in the preheated oven for about 15-20 minutes, depending on how runny you like your yolk.
  7. Remove from the oven and add any optional toppings you prefer.
  8. Serve warm and enjoy!
