- 1 ripe avocado
- 1 lime (juiced)
- Salt and pepper to taste
- 1/4 teaspoon paprika (optional)
- Hot sauce or chili powder (optional for spice)
Instructions
- Hard Boil the Eggs: Place the eggs in a pot of water, bring to a boil, cover, and remove from heat. Let sit off the heat for about 12 minutes.
- Ice Bath: Transfer the eggs to an ice bath to cool them quickly and make peeling easier.
- Peel and Halve: Peel the eggs and cut each in half lengthwise.
- Remove the Yolks: Scoop out the yolks into a bowl.
- Mash Together: Mash the yolks with the ripe avocado and lime juice until smooth.
- Season: Add salt, pepper, and any optional spices, mixing well.
- Fill the Egg Whites: Spoon or pipe the avocado yolk mixture back into the egg white halves.
- Garnish: Sprinkle paprika or add hot sauce for extra flavor.
- Serve: Enjoy immediately or store in the refrigerator until ready to serve.
Notes
Best served fresh, but can be stored in the refrigerator for 2-3 days. Add lime juice to prevent browning.
