Description

A healthy twist on the classic deviled eggs, combining creamy avocado with eggs for a nutritious appetizer.


Ingredients

  • 1 ripe avocado
  • 1 lime (juiced)
  • Salt and pepper to taste
  • 1/4 teaspoon paprika (optional)
  • Hot sauce or chili powder (optional for spice)

Instructions

  1. Hard Boil the Eggs: Place the eggs in a pot of water, bring to a boil, cover, and remove from heat. Let sit off the heat for about 12 minutes.
  2. Ice Bath: Transfer the eggs to an ice bath to cool them quickly and make peeling easier.
  3. Peel and Halve: Peel the eggs and cut each in half lengthwise.
  4. Remove the Yolks: Scoop out the yolks into a bowl.
  5. Mash Together: Mash the yolks with the ripe avocado and lime juice until smooth.
  6. Season: Add salt, pepper, and any optional spices, mixing well.
  7. Fill the Egg Whites: Spoon or pipe the avocado yolk mixture back into the egg white halves.
  8. Garnish: Sprinkle paprika or add hot sauce for extra flavor.
  9. Serve: Enjoy immediately or store in the refrigerator until ready to serve.

Notes

Best served fresh, but can be stored in the refrigerator for 2-3 days. Add lime juice to prevent browning.
