A flavorful and easy recipe for grilled chicken topped with a creamy avocado lime mixture.

- 2 pounds chicken breasts, trimmed, boneless and skinless
- ÂĽ cup olive oil, extra virgin
- ÂĽ cup lime juice
- 1 tbsp dried basil
- 1 tsp ground coriander
- 1 tsp salt
- Âľ tsp chili powder
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp black pepper
- ÂĽ tsp crushed red pepper flakes
- 4 avocados, halved, peeled, pitted, diced
- 2 tbsp fresh cilantro, chopped
- 3 tsp lime juice
- ½ tsp salt
- ½ tsp garlic powder
Instructions
- Slice the chicken breasts horizontally to create 8 thin cutlets.
- Place chicken cutlets in a gallon Ziploc bag with all marinade ingredients. Seal and marinate for at least 1 hour up to 12 hours.
- To grill: Preheat a medium-heat grill. Cook chicken cutlets for 9–10 minutes, turning occasionally until juices run clear.
- On the stove: Heat 2 tbsp olive oil in a skillet over medium-high heat. Cook chicken cutlets for 5 minutes per side until cooked through.
- Combine diced avocado, cilantro, 3 tsp lime juice, ½ tsp salt, and ½ tsp garlic powder in a bowl for the avocado topping.
- Top each chicken cutlet with the avocado mixture and serve immediately.
Notes
Marinate the chicken for longer for a more flavorful result. Adjust avocado topping seasonings to taste.
