Description

A delightful blend of traditional cheesesteak flavors with comforting pasta.


Ingredients

  • 1 lb ground beef or thinly sliced steak strips (ribeye or sirloin)
  • 1 large green bell pepper, diced
  • 1 large yellow or white onion, diced
  • 2 cloves garlic, minced
  • 8 oz cream cheese, softened
  • 1 cup shredded provolone cheese
  • 12 oz pasta (penne, rigatoni, or ziti)
  • 1 cup beef broth
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tablespoon olive oil

Instructions

  1. Cook pasta in a large pot of generously salted boiling water according to package directions for al dente. Reserve about 1 cup of pasta water before draining. Set pasta aside.
  2. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add diced bell pepper and onion, sautéing until softened, about 5-7 minutes. Add minced garlic and cook for 1 minute until fragrant.
  3. If using ground beef, add it to the skillet, breaking it up and cooking until browned. If using steak strips, add them and cook for 3-5 minutes until browned. Season with salt and pepper.
  4. Reduce heat to medium-low. Add softened cream cheese to the skillet and stir until melted and coating the meat and vegetables. Gradually pour in beef broth, stirring constantly until smooth.
  5. Stir in shredded provolone cheese until completely melted and incorporated into the sauce. Add a splash of reserved pasta water if the sauce seems too thick.
  6. Add the drained cooked pasta to the skillet with the sauce. Gently toss until all pasta is evenly coated. Add more reserved pasta water if needed to reach desired consistency.
  7. Taste and adjust seasoning with salt and pepper. Serve immediately in warm bowls.

Notes

For a vegetarian version, substitute beef with mushrooms or lentils.
