A light and comforting Japanese onion soup that is easy to customize with various ingredients.

Ingredients

Scale
  • 1 large onion, sliced
  • 4 cups of water
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon minced ginger
  • Green onions, chopped for garnish
  • Salt and pepper to taste
  • Optional: mushrooms, tofu, or leafy vegetables

Instructions

  1. Prepare the onion: Start by slicing the onion thinly.
  2. Cook the broth: In a pot, add the water and the sliced onion. Bring it to a boil over medium-high heat.
  3. Add seasonings: Once boiling, reduce the heat to low. Stir in soy sauce, sesame oil, and minced ginger. Let it simmer for 15-20 minutes.
  4. Season to taste: After simmering, taste the broth. Add salt and pepper according to your taste preference.
  5. Optional ingredients: If you want to include mushrooms, tofu, or leafy vegetables, add them now and cook for an additional 5-7 minutes until they are tender.
  6. Garnish: Remove from heat, pour into bowls, and top with chopped green onions for a fresh kick.

Notes
