Description

Delicious Apricot Shortbread Bars combining sweet and tart apricots with buttery shortbread for a delightful treat.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup apricot preserves
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan.
  2. Cream together the butter and sugar until light and fluffy.
  3. Gradually add the flour and salt, mixing until just combined.
  4. Press about 2/3 of the dough into the bottom of the prepared pan.
  5. Spread the apricot preserves evenly over the dough.
  6. Combine the remaining dough with oats, brown sugar, and cinnamon. Crumble this mixture over the apricot layer.
  7. Bake for 25-30 minutes or until golden brown.
  8. Let cool before cutting into bars and serving.

Store in an airtight container for up to three days at room temperature, or refrigerate for up to a week. They can also be frozen for up to three months.
