Description

Delicious Apricot Shortbread Bars with a buttery base and sweet apricot preserves, perfect for dessert or snacks.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup apricot preserves

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare an 8×8 inch baking pan by greasing it with butter or cooking spray.
  3. Cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the vanilla extract, then gradually mix in the all-purpose flour until a soft dough forms.
  5. Press the dough evenly into the bottom of the greased baking pan.
  6. Spread the apricot preserves evenly over the top of the pressed dough.
  7. Bake for 20-25 minutes, or until golden brown around the edges.
  8. Cool in the pan before cutting into squares or rectangles for serving.
