- 4 medium sweet potatoes
- 2 cups diced apples
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
- 1/2 cup chopped pecans
- Salt to taste
- Butter or oil for greasing
Instructions
- Preheat the oven to 400°F (200°C).
- Wash the sweet potatoes and poke holes in them with a fork.
- Place them on a baking sheet and bake for 45-60 minutes until tender.
- In a skillet, melt a little butter or oil over medium heat.
- Add the diced apples, brown sugar, cinnamon, and salt. Cook until the apples are soft and caramelized, about 5-7 minutes.
- Once the sweet potatoes are done, let them cool slightly, then slice them open lengthwise.
- Fluff the insides with a fork and season with a pinch of salt.
- Spoon the spiced apple mixture into the sweet potatoes, topping with chopped pecans.
- Serve warm and enjoy your cozy comfort food!
Notes
For easier cooking, wrap sweet potatoes in foil before baking. Microwave them for 4-6 minutes before finishing in the oven for better texture.
