Description

Wholesome apple oatmeal muffins with oats, fresh apple chunks, and cinnamon. Moist, lightly sweet, and perfect for breakfast or snacks.


Ingredients

1 1/2 cups rolled oats

1 cup all-purpose flour

1/2 cup whole wheat flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon cinnamon

1/2 teaspoon salt

1/2 cup brown sugar

1/3 cup vegetable oil

2 large eggs

1 cup Greek yogurt

1 1/2 cups diced apple

1 teaspoon vanilla extract


Instructions

1. Preheat oven to 375°F (190°C). Line muffin tin.

2. Mix oats, flours, baking powder, baking soda, cinnamon, and salt.

3. Whisk brown sugar, oil, eggs, yogurt, and vanilla.

4. Stir wet into dry just until combined.

5. Fold in diced apple.

6. Divide into muffin cups.

7. Bake 18–20 minutes until tops spring back.

8. Cool 5 minutes, then transfer to rack.

Notes

Use rolled oats for best texture.

Toss apple pieces in flour to prevent sinking.

Freeze baked muffins up to 2 months.
