Description

A delightful treat combining sweet and tart fresh apples with a rich, buttery cake, topped with a crunchy crumb topping.


Ingredients

  • 1 teaspoon baking powder

  • 1 cup granulated sugar
  • 2 large eggs

  • 1 cup sour cream
  • 2 cups peeled and diced apples
  • 1 teaspoon cinnamon
  • 1/2 cup brown sugar
  • 1/2 cup oats
  • 1/2 cup flour for crumb topping
  • 1/4 cup melted butter for crumb topping

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. Mix together the flour, baking powder, baking soda, and salt in a bowl. Set aside.
  3. Cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time to the butter and sugar mixture, stirring well after each addition. Then stir in the vanilla extract.
  5. Mix in the sour cream, combining it well with the wet ingredients.
  6. Add the dry ingredients gradually, mixing until just combined. Do not overmix.
  7. Fold in the diced apples that have been sprinkled with cinnamon, ensuring even distribution.
  8. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  9. Combine the brown sugar, oats, flour, and melted butter for the crumb topping. Mix until crumbly and sprinkle over the top of the batter.
  10. Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
  11. Allow the cake to cool slightly in the pan before serving.
