Ingredients

1 tsp baking soda

1 tsp ground cinnamon

½ tsp ground nutmeg

¼ tsp salt

½ cup unsalted butter, softened

1 cup brown sugar

2 eggs

1 cup apple cider

1 tsp vanilla extract

½ cup unsalted butter (for filling)

1 cup brown sugar (for filling)

¼ cup heavy cream (for filling)

1 tsp vanilla (for filling)


Instructions

1. Preheat oven to 350°F and line baking sheets.

2. Whisk flour, baking soda, cinnamon, nutmeg, and salt.

3. Beat butter and brown sugar until fluffy.

4. Add eggs, apple cider, and vanilla.

5. Mix in dry ingredients until just combined.

6. Scoop dough and bake 12–15 minutes until golden.

7. Make caramel: melt butter, add sugar and cream, simmer until thickened. Stir in vanilla.

8. Spread caramel on one cookie, sandwich with another.

9. Serve immediately or store for later.

Notes

Freeze unfilled cookies for up to 3 months.

Use store-bought caramel for convenience.

Swap apple cider for spiced apple juice if preferred.
