- Cornstarch (1 tablespoon): For thickening the sauce (optional)
- Sweet potatoes (2 large): Peeled and cubed
- Butter (2 tablespoons): For creaminess
- Heavy cream or milk (¼ cup): For smoothness
- Salt (to taste): For seasoning
- Cinnamon (¼ teaspoon): Optional, for added warmth
Instructions
- In a bowl, marinate the pork medallions with ½ cup of apple cider, minced garlic, thyme, salt, and pepper for at least 15-30 minutes.
- In a large pot, bring salted water to a boil and cook cubed sweet potatoes for 15-20 minutes until tender. Drain and return to the pot.
- Heat olive oil in a skillet. Sear the pork medallions for 3-4 minutes on each side until browned, then set aside.
- Sauté sliced onion in the same skillet for 3-4 minutes, then add reserved marinade and remaining apple cider and bring to a simmer.
- Return the pork to the skillet, cover, and cook for an additional 10-15 minutes until the pork reaches an internal temperature of 145°F (63°C).
- If desired, thicken the sauce by mixing cornstarch with water, stir into sauce, and cook for 2-3 minutes. Add butter for richness.
- Mix butter, heavy cream (or milk), salt, and cinnamon into the drained sweet potatoes, and mash until smooth.
- Plate the mashed sweet potatoes, top with apple cider pork, and drizzle with sauce. Garnish with fresh thyme if desired.
Notes
Longer marination results in better flavor. Use a meat thermometer for accurate pork doneness.
