Ingredients

  • 1 1/4 cups salted butter, at room temperature (2 1/2 sticks), divided
  • 1 cup apple cider
  • 3/4 cup packed light brown sugar
  • 1 cup granulated sugar, divided
  • 1 large egg, at room temperature
  • 1 1/2 teaspoons vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon kosher salt
  • 1 tablespoon plus 2 teaspoons apple pie spice, divided

Instructions

  1. Brown the Butter: Melt one stick of butter in a medium saucepan over medium heat until golden brown, about 3 to 5 minutes. Pour into a stand mixer bowl and let cool for 30 minutes.
  2. Reduce the Apple Cider: Boil apple cider in a small saucepan over medium-high heat. Reduce heat to simmer and cook until cider is reduced to 1/4 cup, about 10 to 15 minutes. Cool completely.
  3. Preheat the Oven: Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  4. Mix the Ingredients: In the stand mixer with cooled brown butter, beat brown sugar, 1/2 cup granulated sugar, and remaining stick of butter until light and fluffy, 2 to 3 minutes.
  5. Add the Wet Ingredients: Add egg, vanilla extract, and cooled reduced apple cider, mixing well.
  6. Combine the Dry Ingredients: In a separate bowl, whisk together flour, baking soda, salt, and 2 teaspoons of apple pie spice. Gradually add this dry mix to the wet ingredients while mixing on low speed.
  7. Shape the Cookies: Form dough into balls about 3 tablespoons in size and arrange on prepared baking sheets, spaced about 3 inches apart.
  8. Bake the Cookies: Bake in preheated oven for 12 to 14 minutes, rotating sheets halfway through. Let cool on baking sheet for 5 minutes.
  9. Cool and Coat: Transfer cookies to wire racks for an additional 5 minutes. Mix remaining 1/2 cup granulated sugar with 1 tablespoon apple pie spice. Brush cooled cookies with melted butter and coat in spiced sugar mixture.
