Description
Apple Cider Chicken is a cozy fall dinner with tender chicken simmered in a cider and herb sauce. Perfect for weeknights or gatherings.
Ingredients
4 boneless chicken breasts
1 cup apple cider
1 tbsp olive oil
1 onion, sliced
2 garlic cloves, minced
1 tsp thyme
1 tsp Dijon mustard (optional)
1/4 cup chicken broth
1 tbsp butter
Salt and pepper
Instructions
1. Season chicken and sear in skillet.
2. Remove chicken, sauté onions and garlic.
3. Pour in cider and broth, simmer 5 minutes.
4. Add thyme and mustard.
5. Return chicken, cover, and cook 10 minutes.
6. Finish with butter, serve hot.
Notes
For creamy version, stir in 2 tbsp cream.
Add apple slices for more sweetness.
Refrigerate leftovers up to 3 days or freeze 2 months.
