- 1 teaspoon baking soda

- 1 cup unsalted butter, softened

- 1 large egg
- 1/4 cup apple cider
- 1 teaspoon vanilla extract
- 1 cup cream cheese, softened
- 1/2 cup powdered sugar
- 2 tablespoons butter, melted
- 1/4 cup granulated sugar for sprinkling
- 1 teaspoon ground cinnamon for sprinkling
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Mix together the flour, baking soda, cinnamon, nutmeg, and salt. Set aside.
- Cream the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add the egg, apple cider, and vanilla extract to the butter-sugar mixture. Mix well.
- Gradually add the dry ingredients to the wet mixture. Mix until just combined.
- Beat the cream cheese and powdered sugar in another bowl until smooth.
- Scoop out about a tablespoon of cookie dough, flatten it, and place a teaspoon of cream cheese filling in the center. Wrap the dough around it to form a ball.
- Place the cookies on the baking sheet, brush with melted butter, and sprinkle with sugar and cinnamon.
- Bake the cookies for 12-15 minutes until edges are golden. Cool on a wire rack before serving.

Store cookies in an airtight container. Can be frozen for up to three months.
