Delightful apple bars with a crumbly oat crust and a sweet apple filling.

- 2 cups all-purpose flour
- 1 1/2 cups old-fashioned oats
- 1/2 cup granulated sugar
- 3/4 cup brown sugar
- 1 cup unsalted butter, cold and cubed
- 1/2 teaspoon salt
- 1 1/2 teaspoons ground cinnamon
- 1/4 teaspoon nutmeg (optional)
- 3 cups apples, peeled and chopped
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1/2 cup powdered sugar
- 1–2 tablespoons milk (for glaze)
Instructions
- Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
- In a large bowl, combine the flour, oats, granulated sugar, brown sugar, salt, and cinnamon.
- Cut the cold, cubed butter into the dry mixture until crumbly.
- Reserve 1 ½ cups of the mixture for topping, and press the rest into the bottom of the pan. Bake for 10–12 minutes until set.
- Prepare the apple filling by tossing chopped apples with lemon juice, cornstarch, vanilla extract, cinnamon, and nutmeg (if using).
- Pour the apple mixture evenly over the baked crust.
- Sprinkle the reserved crumb mixture over the top.
- Bake for another 30–35 minutes until golden brown and bubbly.
- Cool completely in the pan before slicing into squares.
- For the glaze, whisk together powdered sugar and milk, and drizzle over the cooled bars before serving.
Notes
Store in an airtight container at room temperature for 3-4 days or refrigerate for up to a week. For long-term storage, freeze for up to 3 months.
