- 1 cup diced bell peppers (any color)
- 1 cup diced cucumbers
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, finely chopped
- 1 cup cream cheese
- 1 teaspoon garlic powder
- 2 tablespoons fresh lemon juice
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions
- Wash and dice the bell peppers and cucumbers, halve the cherry tomatoes, and finely chop the red onion.
- In a medium bowl, mix together the cream cheese, garlic powder, and lemon juice until smooth.
- Add the prepared vegetables to the cream cheese mixture and stir gently to coat.
- Season with salt and pepper, adjusting to taste.
- Cover and refrigerate for at least 30 minutes to meld flavors.
- Serve on a platter, garnished with fresh herbs if desired, alongside crackers or veggies.
