Description

Ingredients

  • 1 cup diced bell peppers (any color)
  • 1 cup diced cucumbers
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1 cup cream cheese
  • 1 teaspoon garlic powder
  • 2 tablespoons fresh lemon juice
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Wash and dice the bell peppers and cucumbers, halve the cherry tomatoes, and finely chop the red onion.
  2. In a medium bowl, mix together the cream cheese, garlic powder, and lemon juice until smooth.
  3. Add the prepared vegetables to the cream cheese mixture and stir gently to coat.
  4. Season with salt and pepper, adjusting to taste.
  5. Cover and refrigerate for at least 30 minutes to meld flavors.
