Description

Delightful and easy-to-make jam that captures the unique tangy flavor of rhubarb, perfect for spreading on toast or using in desserts.


Ingredients

  • 4 cups rhubarb, chopped
  • 1 cup granulated sugar
  • 1 cup water
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup lemon juice
  • 1 package (1.75 oz) fruit pectin

Instructions

  1. Combine the rhubarb, sugar, and water in a saucepan. Bring the mixture to a boil, then reduce the heat and let it simmer for 10 minutes.
  2. Stir in the cinnamon, nutmeg, and lemon juice.
  3. Add the fruit pectin and bring the mixture back to a boil, stirring constantly.
  4. Boil for 1 minute, then remove from heat and let cool slightly.
  5. Pour the jam into sterilized jars and seal them tightly.

Notes

Store the jam in the refrigerator for up to 3 weeks, or process in a water bath for longer shelf life. Always use fresh rhubarb for best results.
