- 4 cups rhubarb, chopped
- 1 cup granulated sugar
- 1 cup water
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 cup lemon juice
- 1 package (1.75 oz) fruit pectin
Instructions
- Combine the rhubarb, sugar, and water in a saucepan. Bring the mixture to a boil, then reduce the heat and let it simmer for 10 minutes.
- Stir in the cinnamon, nutmeg, and lemon juice.
- Add the fruit pectin and bring the mixture back to a boil, stirring constantly.
- Boil for 1 minute, then remove from heat and let cool slightly.
- Pour the jam into sterilized jars and seal them tightly.
Notes
Store the jam in the refrigerator for up to 3 weeks, or process in a water bath for longer shelf life. Always use fresh rhubarb for best results.
