Delightful dessert bars combining the sweetness of oatmeal with the tartness of rhubarb, perfect for any occasion.
Ingredients

- 2 cups rolled oats
- 1 cup all-purpose flour
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 2 cups rhubarb, chopped
- 1/4 cup water
- 1 tablespoon cornstarch
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- Mix together the oats, flour, brown sugar, granulated sugar, baking soda, salt, and cinnamon in a large bowl.
- Cut in the butter until the mixture resembles coarse crumbs.
- Press half of the mixture into the bottom of the prepared dish.
- Combine the chopped rhubarb and water in a saucepan. Cook over medium heat until the rhubarb is tender.
- Stir in cornstarch and cook until thickened. Spoon the rhubarb mixture over the crust in the baking dish.
- Sprinkle the remaining oat mixture over the top.
- Bake for 30-35 minutes or until golden brown.
- Allow to cool before cutting into bars.
Notes
Store in an airtight container at room temperature for up to a few days, or refrigerate for up to a week. Can be frozen for up to three months.
