Instructions
- Prepare the Jars: Begin by sterilizing your jars and lids. You can do this by washing them in hot, soapy water and then placing them in a boiling water bath for 10 minutes.
- Make the Pickles: Slice the cucumbers into thin pieces and pack them tightly into the prepared sterilized jars.
- Create the Brine: In a saucepan, combine vinegar, water, salt, sugar, and your chosen spices. Bring this mixture to a boil. Once boiling, carefully pour it over the packed cucumbers in the jars, leaving about ½ inch of headspace at the top.
- Seal and Process: Wipe the rims of the jars clean and place the sterilized lids on top. Seal the jars with the metal bands. Process them in a boiling water bath for the recommended time, about 10-15 minutes.
- Make the Preserves: For fruit preserves, start by chopping your fruits into smaller pieces. Mix the chopped fruits with sugar and pectin in a large pot. Cook the mixture over medium heat, stirring frequently, until it comes to a full boil.
- Fill the Jars: Once it reaches a boil, pour the hot fruit mixture into sterilized jars, leaving about ¼ inch of headspace. Clean the rims of the jars, place the lids on, and seal them.
- Process the Preserves: Just like with the pickles, process the jars in a boiling water bath for about 5-10 minutes.
- Cool and Store: Allow the jars to cool completely at room temperature. Once cooled, store them in a dark, cool place for optimal preservation.
