Description

A hearty one-pot meal combining ground beef, pasta, and zesty tomatoes, perfect for a quick weeknight dinner.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can (15 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups elbow macaroni
  • 2 cups beef broth
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Brown the ground beef along with chopped onion, minced garlic, and bell pepper in a large skillet over medium heat until the beef is no longer pink and vegetables are softened. Drain excess fat.
  2. Add the tomato sauce, diced tomatoes, beef broth, elbow macaroni, and Italian seasoning to the skillet, stirring to combine.
  3. Bring the mixture to a boil, then reduce heat to low, cover, and let it simmer for about 20 minutes, stirring occasionally, until pasta is tender and liquid is mostly absorbed.
  4. Season with salt and pepper to taste. If desired, top with shredded cheese just before serving and allow it to melt for a minute or two.

Notes

Don’t overcook the pasta; cook it just until al dente. Drain the excess fat after browning the beef for a less greasy dish.
