Description
A hearty one-pot meal combining ground beef, pasta, and zesty tomatoes, perfect for a quick weeknight dinner.
Ingredients
Scale
- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can (15 oz) tomato sauce
- 1 can (14.5 oz) diced tomatoes
- 2 cups elbow macaroni
- 2 cups beef broth
- 1 tablespoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
Instructions
- Brown the ground beef along with chopped onion, minced garlic, and bell pepper in a large skillet over medium heat until the beef is no longer pink and vegetables are softened. Drain excess fat.
- Add the tomato sauce, diced tomatoes, beef broth, elbow macaroni, and Italian seasoning to the skillet, stirring to combine.
- Bring the mixture to a boil, then reduce heat to low, cover, and let it simmer for about 20 minutes, stirring occasionally, until pasta is tender and liquid is mostly absorbed.
- Season with salt and pepper to taste. If desired, top with shredded cheese just before serving and allow it to melt for a minute or two.
Notes
Don’t overcook the pasta; cook it just until al dente. Drain the excess fat after browning the beef for a less greasy dish.
