- 2 cups rolled oats
- 1/2 cup chopped pecans
- 1 teaspoon baking powder

- 1/4 teaspoon ground cinnamon
- 1 1/2 cups milk (dairy or non-dairy)
- 1/2 cup pure maple syrup
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 cup melted butter or coconut oil
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease an 8×8 inch baking dish.
- In a large bowl, combine the rolled oats, chopped pecans, baking powder, salt, and cinnamon. Mix these dry ingredients well.
- In a separate bowl, whisk together the milk, maple syrup, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients. Stir everything together until just combined. Do not overmix.
- Pour the oatmeal mixture into your prepared baking dish.
- Drizzle the melted butter or coconut oil evenly over the top of the mixture.
- Bake for 30 to 35 minutes, or until the top is lightly golden brown and the oatmeal is set.
- Let it cool slightly before cutting into squares and serving warm.
