A quick and healthy alternative to pasta, this Garlic Parmesan Spaghetti Squash is packed with flavor and ready in just 37 minutes.

- 1 medium spaghetti squash
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/4 cup grated Parmesan cheese, plus more for serving
- 2 tablespoons fresh parsley, chopped
- Salt, to taste
- Black pepper, to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Place the squash halves cut-side down on a baking sheet and roast for 30 to 40 minutes until tender.
- Once cooled slightly, use a fork to scrape out the flesh into strands.
- In a large skillet, heat olive oil over medium heat and sauté the minced garlic for about 1 minute.
- Add the spaghetti squash strands to the skillet and toss to coat with the garlic oil.
- Remove from heat, stir in the grated Parmesan cheese and chopped parsley, season with salt and black pepper.
- Serve immediately, adding extra Parmesan cheese on top if desired.
Notes
For a twist, add spinach or swap Parmesan with feta cheese. Be careful not to burn the garlic while sautéing.
