Description

A quick and healthy alternative to pasta, this Garlic Parmesan Spaghetti Squash is packed with flavor and ready in just 37 minutes.


Ingredients

Scale
  • 1 medium spaghetti squash
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • 2 tablespoons fresh parsley, chopped
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Place the squash halves cut-side down on a baking sheet and roast for 30 to 40 minutes until tender.
  4. Once cooled slightly, use a fork to scrape out the flesh into strands.
  5. In a large skillet, heat olive oil over medium heat and sauté the minced garlic for about 1 minute.
  6. Add the spaghetti squash strands to the skillet and toss to coat with the garlic oil.
  7. Remove from heat, stir in the grated Parmesan cheese and chopped parsley, season with salt and black pepper.
  8. Serve immediately, adding extra Parmesan cheese on top if desired.

Notes

For a twist, add spinach or swap Parmesan with feta cheese. Be careful not to burn the garlic while sautéing.
