Description

Ingredients

  • 1 cup orzo pasta
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/4 cup chopped fresh parsley
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cook the orzo according to package directions until al dente, about 8-10 minutes. Drain well.
  2. While the orzo cooks, heat olive oil in a small skillet over medium heat and sauté the minced garlic for about one minute until fragrant.
  3. In a large bowl, combine the cooked orzo, sautéed garlic and olive oil, fresh lemon juice, and lemon zest.
  4. Gently toss together to coat the pasta evenly with the garlic and lemon mixture.
  5. Stir in the chopped fresh parsley.
  6. Season with salt and black pepper to taste.
  7. Serve warm or at room temperature.
