- 1 cup Granulated sugar
- 1 cup Brown sugar (packed)
- 2 Large eggs
- 1 teaspoon Almond extract
- 3 cups All-purpose flour
- 1 teaspoon Baking soda
- 1/2 teaspoon Salt
- 1 cup Maraschino cherries (chopped)
- 1 cup Chopped almonds
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the almond extract.
- In another bowl, combine the flour, baking soda, and salt. Gradually add this dry mixture to the creamed mixture until well blended.
- Gently fold in the chopped maraschino cherries and chopped almonds.
- Drop the dough by rounded tablespoons onto ungreased baking sheets, ensuring space between each mound.
- Bake for about 10-12 minutes, or until lightly golden.
- Let the cookies cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.
