Description

Delightful cookies that combine the flavors of chocolate, coconut, and almonds, offering a perfect balance of chewy, crunchy, and creamy textures.


Ingredients

  • 1 cup shredded coconut
  • 1/2 cup almond flour
  • 2 tablespoons coconut oil, melted
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips
  • 1/4 cup chopped almonds

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, combine the shredded coconut, almond flour, melted coconut oil, honey or maple syrup, vanilla extract, and salt. Mix until well combined.
  3. Gently fold in the dark chocolate chips and chopped almonds.
  4. Use a tablespoon to scoop out portions of the dough and place them on the prepared baking sheet, keeping them about 2 inches apart.
  5. Bake for 10–12 minutes, or until the edges of the cookies turn golden brown.
  6. Let the cookies cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
