- 1 cup shredded coconut
- 1/2 cup almond flour
- 2 tablespoons coconut oil, melted
- 1/4 cup honey or maple syrup
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup dark chocolate chips
- 1/4 cup chopped almonds
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, combine the shredded coconut, almond flour, melted coconut oil, honey or maple syrup, vanilla extract, and salt. Mix until well combined.
- Gently fold in the dark chocolate chips and chopped almonds.
- Use a tablespoon to scoop out portions of the dough and place them on the prepared baking sheet, keeping them about 2 inches apart.
- Bake for 10–12 minutes, or until the edges of the cookies turn golden brown.
- Let the cookies cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
