- 1 cup packed medjool dates, pitted
- 2 tablespoons creamy almond butter, or any nut/seed butter
- 1 tablespoon coconut oil, melted
- 1 cup chocolate chips, or an 8-ounce chocolate bar
- 2 teaspoons coconut oil, melted (for dipping chocolate)
Instructions
- Soak the pitted medjool dates in a bowl of very hot water for about 10 minutes.
- Drain the dates and transfer them to a food processor or blender, add almond butter and melted coconut oil, and pulse until smooth.
- Transfer the mixture to a lined 9×5-inch loaf pan and smooth the top, then freeze for 2-3 hours until firm.
- Remove the frozen caramel from the pan and cut into 12 squares.
- Melt chocolate chips and remaining coconut oil in a heat-safe bowl until smooth.
- Dip each caramel square into the melted chocolate and let excess drip off, then place on a parchment-lined plate.
- Once all caramels are dipped, refrigerate for 1 hour until chocolate has set.
- Enjoy immediately or store in the fridge for later.
Notes
Store in an airtight container in the refrigerator for about a week, or freeze for up to three months.
