- 2 lbs ground beef
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 2 cups beef broth
- 1 tbsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- Olive oil for cooking
- Optional toppings: shredded cheese, sour cream, chopped green onions
Instructions
- Heat a tablespoon of olive oil in a large pot over medium heat.
- Add chopped onion and garlic; sauté until onions are translucent.
- Include the diced bell pepper and cook for another 2-3 minutes.
- Stir in the ground beef and cook until browned, breaking it up with a spoon.
- Drain any excess fat from the pot.
- Add the diced tomatoes, kidney beans, beef broth, chili powder, cumin, salt, and pepper.
- Bring the mixture to a boil, then reduce heat to low and simmer for 30 minutes, stirring occasionally.
- Serve hot with optional toppings as desired.
