- 4 boneless skinless chicken thighs
- 1 tablespoon olive oil
- 1 cup gluten-free breadcrumbs
- 0.25 cup finely grated Parmesan cheese
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 0.5 teaspoon onion powder
- 0.75 teaspoon salt
- 0.5 teaspoon black pepper
- 2 large eggs
Instructions
- Preheat your air fryer to 400°F (200°C) for 5 minutes.
- Pat the chicken thighs dry with paper towels and toss with olive oil.
- Beat the eggs until smooth in one bowl.
- Mix the gluten-free breadcrumbs, Parmesan cheese, paprika, garlic powder, onion powder, salt, and black pepper in another bowl.
- Dip each chicken thigh into the egg mixture and coat well with the breadcrumb mixture.
- Place the chicken thighs in the air fryer basket in a single layer.
- Cook the chicken at 400°F for 12-14 minutes, flipping halfway through.
