A nutritious salad packed with protein-rich quinoa and fresh vegetables, perfect for summer meals or meal prep.
Ingredients

- 1 cup quinoa
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 cup red onion, chopped
- 1/4 cup fresh parsley, chopped
- 1 can chickpeas, drained and rinsed
- 1/4 cup feta cheese (optional)
- Juice of 1 lemon
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- Combine quinoa and water in a pot. Bring to a boil, then lower the heat. Cover and simmer for 15 minutes until the water is absorbed.
- Fluff the quinoa with a fork and let it cool slightly.
- In a big bowl, combine the cooled quinoa, cherry tomatoes, cucumber, bell pepper, red onion, parsley, and chickpeas.
- In a small bowl, whisk together lemon juice, olive oil, salt, and pepper. Pour over the salad and mix.
- If you’d like, sprinkle feta cheese on top before serving.
Notes
Rinse quinoa well to remove its natural coating, called saponin, which can taste bitter.
