Description

A quick and flavorful dish featuring black beans, spices, and lime, perfect for a fast meal.

Ingredients

Scale
  • 1 3/4 cups Cooked Black Beans (undrained, about one can or cooked from scratch)
  • 1/4 cups Red or White Onion (diced)
  • 1/2 cups Fire Roasted Tomatoes (from a can)
  • 2 tsp Adobo Sauce
  • 1 Chipotle Pepper (minced, optional)
  • 1/2 tsp Fine Sea Salt
  • 1/2 tsp Ground Cumin
  • 1/4 tsp Garlic Powder (or 1 minced garlic clove)
  • 1 Lime (juiced)

Instructions

  1. Add the cooked black beans along with their liquid to a medium saucepan.
  2. Stir in the diced onions, fire-roasted tomatoes, and adobo sauce, adding the minced chipotle pepper if using.
  3. Add the sea salt, ground cumin, and garlic powder (or minced garlic) to the mixture.
  4. Turn the heat to medium and cook for about 5 to 7 minutes, stirring occasionally.
  5. Finally, remove from heat and stir in the fresh lime juice.
  6. Taste and adjust seasoning as needed, then serve hot.

Notes

Black beans are versatile and can be served as a main dish or side, or used in tacos and burritos. Don’t skip the lime; it’s essential for balancing flavors.
