- 1 cup cottage cheese
- 2 large eggs
Instructions
- Preheat your oven to 375°F (190°C) and line a rimmed baking sheet with high-quality parchment paper.
- Place the cottage cheese and eggs into a high-speed blender or food processor.
- Blend on high for approximately 30 to 45 seconds until the mixture is completely smooth and no curds remain.
- Pour the batter onto the prepared baking sheet and use a spatula to spread it into an even rectangle or two circular shapes about 1/4 inch thick.
- Bake for 20 to 25 minutes until the edges are golden brown and the center feels firm and springy to the touch.
- Remove from the oven and allow to cool on the pan for at least 5 to 10 minutes to set.
- Carefully peel the wrap away from the parchment paper and fill with your desired proteins or vegetables before rolling.
Notes
Avoid over-blending the mixture and use quality parchment paper to prevent sticking.
