Ingredients

  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup pumpkin puree (optional)
  • 1 teaspoon cinnamon (optional)
  • ¼ teaspoon nutmeg (optional)
  • Halloween-themed toppings (like candy corn or chocolate spiders)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Combine the crushed graham crackers, melted butter, and 2 teaspoons of sugar in a medium bowl. Press the mixture into the bottom of a springform pan to create a crust.
  3. Beat the softened cream cheese until smooth in a large mixing bowl. Gradually add in the sugar and vanilla extract, mixing well.
  4. Add the eggs one at a time, mixing on low speed until just combined. If you’re using pumpkin puree, cinnamon, and nutmeg, fold them in gently.
  5. Pour the cheesecake mixture over the crust in the springform pan. Bake for about 55-60 minutes or until the edges are set and the center is slightly jiggly.
  6. Turn off the oven and let the cheesecake cool in the oven with the door slightly open for about an hour.
  7. Chill the cheesecake in the refrigerator for at least 240 minutes before serving. Decorate with Halloween-themed toppings before serving.
