- 2 teaspoons sugar
- 4 packages (8 ounces each) of cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup pumpkin puree (optional)
- 1 teaspoon cinnamon (optional)
- ¼ teaspoon nutmeg (optional)
- Halloween-themed toppings (like candy corn or chocolate spiders)
Instructions
- Preheat your oven to 325°F (160°C).
- Combine the crushed graham crackers, melted butter, and 2 teaspoons of sugar in a medium bowl. Press the mixture into the bottom of a springform pan to create a crust.
- Beat the softened cream cheese until smooth in a large mixing bowl. Gradually add in the sugar and vanilla extract, mixing well.
- Add the eggs one at a time, mixing on low speed until just combined. If you’re using pumpkin puree, cinnamon, and nutmeg, fold them in gently.
- Pour the cheesecake mixture over the crust in the springform pan. Bake for about 55-60 minutes or until the edges are set and the center is slightly jiggly.
- Turn off the oven and let the cheesecake cool in the oven with the door slightly open for about an hour.
- Chill the cheesecake in the refrigerator for at least 240 minutes before serving. Decorate with Halloween-themed toppings before serving.

Avoid overmixing the batter to prevent cracks; using a water bath can help cook the cheesecake evenly.
