Ingredients

- Chickpea Salad: Canned chickpeas, Cucumber, Tomato, Lemon juice, Olive oil, Salt and pepper
- Lentil Soup: Dried lentils, Carrot, Celery, Onion, Vegetable broth, Italian seasoning
- Bean and Cheese Quesadilla: Tortillas, Canned beans (black or pinto), Cheese, Salsa
- Baked Potatoes with Toppings: Potatoes, Butter, Cheese, Broccoli, Sour cream (optional)
- Cabbage Stir-Fry: Cabbage, Carrot, Soy sauce, Garlic, Onion
- Egg and Spinach Breakfast Wrap: Tortilla, Eggs, Spinach, Cheese, Salsa (optional)
- Simple Tomato Soup: Canned tomatoes, Onion, Garlic, Vegetable broth, Basil

- Garlic Butter Noodles: Spaghetti or any noodle, Butter, Garlic, Parsley, Parmesan (optional)
- Tuna Salad: Canned tuna, Mayonnaise, Celery, Onion, Pickles
- Homemade Pizza: Pizza dough, Tomato sauce, Cheese, Toppings of choice (pepperoni, veggies)
- Vegetable Curry: Mixed vegetables, Coconut milk, Curry powder, Rice
- Omelet: Eggs, Cheese, Vegetables (bell pepper, onion, spinach), Salt and pepper
- Pancakes: Flour, Eggs, Milk, Baking powder, Sugar
Instructions
- Heat olive oil in a large pot over medium heat for One-Pot Pasta. Add chopped onions and garlic. Cook until soft, followed by canned tomatoes, pasta, water, and seasonings. Cook until pasta is al dente, usually about 10-12 minutes.
- Heat oil in a pan for Vegetable Fried Rice. Add garlic and mixed vegetables. Stir-fry for a few minutes. Add cooked rice and soy sauce. If using, push rice to the side, scramble an egg in the pan, and mix it all together.
- Combine drained chickpeas, diced cucumber, and tomato in a bowl for Chickpea Salad. Drizzle with lemon juice and olive oil. Mix well. Season with salt and pepper.
- Rinse lentils. In a pot, heat oil and add chopped onion, carrot, and celery for Lentil Soup. Add lentils and vegetable broth. Bring to a boil. Reduce heat, cover, and simmer until lentils are tender.
- Heat a skillet over medium heat for Bean and Cheese Quesadilla. Place a tortilla in it. Spread beans and cheese on half of the tortilla. Fold and cook until golden brown on each side.
- Preheat the oven to 400°F (200°C) for Baked Potatoes. Poke holes in potatoes with a fork and bake for 45 minutes. Top with butter, cheese, and other toppings.
- Heat oil in a pan for Cabbage Stir-Fry. Add chopped onion and garlic. Add shredded cabbage and carrot. Stir-fry until tender. Add soy sauce and cook for another minute.
- Scramble eggs in a skillet for Egg and Spinach Breakfast Wrap. Add spinach until wilted. Place the mixture onto a tortilla. Add cheese and salsa, then wrap and serve.
- Heat oil in a pot for Simple Tomato Soup. Sauté onions and garlic until soft. Add canned tomatoes and vegetable broth. Simmer for 15 minutes. Blend until smooth and season with basil.
- Heat oil in a pot for Rice and Beans. Sauté garlic and onion. Add canned beans and cooked rice. Season with cumin and heat through.
- Cook pasta according to the package directions for Pasta Salad. Drain and cool. Combine pasta, mixed vegetables, and dressing in a bowl. Add cheese if desired.
- Cut tops off bell peppers for Stuffed Peppers and remove seeds. Mix cooked rice, canned tomatoes, and optional ground meat in a bowl. Stuff mixture into peppers and bake at 375°F (190°C) for 30 minutes.
- Cook noodles according to package for Garlic Butter Noodles. Drain and return to pot. Melt butter, mix with minced garlic, pour over noodles. Toss with parsley and optional parmesan.
- Combine drained tuna, mayonnaise, diced celery, onion, and pickles in a bowl for Tuna Salad. Mix well. Serve on bread or with crackers.
- Preheat the oven to 475°F (245°C) for Homemade Pizza. Roll out dough on a pizza stone or baking sheet. Spread sauce, add cheese and toppings. Bake for 12-15 minutes.
- Combine mixed vegetables and curry powder in a pot for Vegetable Curry. Add coconut milk and simmer for 20 minutes. Serve over rice.
- Beat eggs in a bowl and season for Omelet. Pour into a heated skillet. Cook until bottom is set. Add cheese and veggies, fold, and serve.
- Mix flour, baking powder, sugar, milk, and eggs in a bowl for Pancakes. Heat a skillet and pour batter for each pancake. Cook until bubbles form, then flip and cook until golden brown.
